Season the chicken thighs with salt and pepper on both sides.
Heat 1 tablespoon of olive oil and the butter in a large, deep skillet or Dutch oven over medium-high heat.
Add the chicken thighs, skin-side down, and sear for 4-5 minutes until golden brown. Flip and cook for another 3-4 minutes. Remove the chicken and set aside.
In the same skillet, add the diced bacon and cook until crispy, about 5 minutes. Remove with a slotted spoon and set aside.
Add the remaining 1 tablespoon of olive oil to the skillet if needed, then add the onions and sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for 1 minute.
