  • 240 milliliters dry red wine
  • 240 milliliters low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 4 sprigs fresh thyme sprigs
  • 1 leaf bay leaf
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Season the chicken thighs with salt and pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil and the butter in a large, deep skillet or Dutch oven over medium-high heat.

Add the chicken thighs, skin-side down, and sear for 4-5 minutes until golden brown. Flip and cook for another 3-4 minutes. Remove the chicken and set aside.

In the same skillet, add the diced bacon and cook until crispy, about 5 minutes. Remove with a slotted spoon and set aside.
