Ingredients

  • 8 cups Iceberg lettuce
  • 4 ounces Cooked ham
  • 4 ounces Cooked turkey breast
  • 4 ounces Swiss cheese
  • 2 tablespoons Sweet gherkin pickles
  • 2 tablespoons White vinegar
  • 1 tablespoon Fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground white pepper
  • 0.25 teaspoon Dry mustard powder
  • 1 Egg yolk
  • 0.5 cup Vegetable oil
  • 1 teaspoon White onion (finely grated or minced)

Directions

Step 1

Start by preparing the salad base. Wash and dry the iceberg lettuce, then chop it into bite-sized pieces. Set aside in a large salad bowl.

Step 2

Cut the cooked ham, cooked turkey breast, and Swiss cheese into thin strips or julienne cuts. Add these to the lettuce.

Step 3

Finely chop the sweet gherkin pickles and sprinkle them over the salad mixture.

Step 4

Make the Maurice Dressing: In a medium bowl, whisk together the white vinegar, lemon juice, Dijon mustard, sugar, salt, white pepper, and dry mustard powder until combined.

Step 5

Add the egg yolk to the dressing mixture and whisk again until smooth.

Step 6

While continuously whisking, slowly drizzle in the vegetable oil to create a smooth, emulsified dressing. Stir in the grated or finely minced onion.

Step 7

Pour the dressing over the salad mixture and gently toss until all the ingredients are evenly coated.

Step 8

Serve immediately or refrigerate for up to 2 hours before serving to allow the flavors to meld.
