Ingredients

  • 1.5 cups Whole wheat flour
  • 0.5 cups Rolled oats
  • 2 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground cloves
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.5 cups Unsweetened applesauce
  • 0.5 cups Molasses
  • 2 tablespoons Honey
  • 0.5 cups Plain Greek yogurt
  • 1 teaspoon Vanilla extract
  • 0.5 cups Unsweetened almond milk (or milk of choice)

Directions

Step 1

Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, combine the whole wheat flour, rolled oats, ground ginger, ground cinnamon, ground cloves, baking powder, baking soda, and salt. Stir well to combine.

Step 3

In a separate medium bowl, whisk together the egg, unsweetened applesauce, molasses, honey, Greek yogurt, vanilla extract, and almond milk until smooth and well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently stir with a spatula or spoon until just combined. Don't overmix, as this can result in dense muffins.

Step 5

Evenly divide the batter among the 12 muffin cups, filling each about 3/4 full.

Step 6

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Remove the muffin tin from the oven and let the muffins cool for about 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Enjoy the muffins warm, or store them in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
