Ingredients

  • 1 lb fresh green beans
  • 3 tbsp unsalted butter
  • 1 medium yellow onion
  • 3 cloves garlic
  • 3 tbsp all-purpose flour
  • 1 cup chicken broth
  • 1 cup whole milk
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp paprika
  • 1.5 cups crispy fried onions

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add the green beans and blanch them for 4-5 minutes until tender-crisp. Drain and transfer to a large bowl filled with ice water to stop the cooking process. Once cooled, drain thoroughly and set aside.

Step 3

In a medium saucepan over medium heat, melt the butter. Add the finely diced onion and sauté for 3-4 minutes, or until translucent. Stir in minced garlic and cook for 1 minute, until fragrant.

Step 4

Sprinkle the flour over the onion mixture and whisk continuously for 1-2 minutes to create a roux. Slowly pour in the chicken broth and milk, whisking to combine and prevent lumps. Cook for 3-4 minutes, or until the sauce starts to thicken.

Step 5

Reduce the heat to low and stir in the grated Parmesan cheese, salt, black pepper, and paprika. Cook for an additional 1-2 minutes until the cheese is fully melted and the sauce is creamy. Remove from heat.

Step 6

In a large mixing bowl, combine the blanched green beans and the cheese sauce. Mix well to coat all the beans evenly.

Step 7

Transfer the mixture into a greased 9x13-inch baking dish. Spread it out into an even layer.

Step 8

Sprinkle the crispy fried onions over the top of the casserole in an even layer.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the casserole is bubbling around the edges.

Step 10

Remove from the oven and let it cool for 5 minutes before serving. Enjoy!
