  • 4 medium zucchini
  • 2 tablespoons olive oil

  • 0.5 cup panko breadcrumbs
  • 2 tablespoons, chopped fresh basil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Wash and trim the ends of the zucchinis. Slice them into thin rounds, approximately 1/4-inch thick.

Heat a large skillet over medium heat and add the olive oil. Add the diced onion and sauté for 3-5 minutes until softened.

Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to prevent burning.
