  • 1 cup Celery, diced
  • 1 medium Onion, finely diced
  • 0.75 cup Acini di pepe pasta
  • 4 cups Fresh spinach (or escarole), chopped
  • 2 tbsp Fresh parsley, finely chopped

Directions

Step 1

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, garlic powder, salt, and pepper. Mix until well combined.

Step 2

Roll the meat mixture into small, bite-sized meatballs, about 1 inch in diameter. Place them on a plate or tray.
