Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.
Add the sausage and cook, breaking it up into small pieces with a wooden spoon, until browned and cooked through, about 6-8 minutes. Remove and set aside, leaving the rendered fat in the pot.
In the same pot, add the diced onion, carrot, and celery. Sauté until softened, about 5-6 minutes.
