Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage, casing removed
  • 1 large yellow onion, finely diced
  • 3 units garlic cloves, minced
  • 1 medium carrot, finely diced
  • 1 medium celery stalk, finely diced
  • 28 ounces crushed tomatoes (canned)
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 1 cup chicken or beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 ounces penne pasta
  • 0.5 cup Parmesan cheese, grated (for serving)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the sausage and cook, breaking it up into small pieces with a wooden spoon, until browned and cooked through, about 6-8 minutes. Remove and set aside, leaving the rendered fat in the pot.

Step 3

In the same pot, add the diced onion, carrot, and celery. Sauté until softened, about 5-6 minutes.

Step 4

Add the minced garlic and cook for another minute until fragrant.

Step 5

Stir in the tomato paste and cook for 1-2 minutes to caramelize slightly.

Step 6

Deglaze the pot with the red wine, scraping up any browned bits from the bottom of the pot, and let it simmer for 3-4 minutes until slightly reduced.

Step 7

Add the cooked sausage back to the pot, along with the crushed tomatoes, broth, oregano, basil, red pepper flakes (if using), salt, and black pepper. Stir to combine.

Step 8

Lower the heat to a gentle simmer, cover partially with a lid, and cook for 45 minutes, stirring occasionally to prevent sticking.

Step 9

While the ragu simmers, bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain the pasta, reserving 1/2 cup of pasta water.

Step 10

When the ragu is ready, adjust the seasoning with additional salt and pepper as needed. If the sauce is too thick, stir in the reserved pasta water a little at a time to reach your desired consistency.

Step 11

Toss the cooked penne with the ragu until well coated.

Step 12

Serve hot, topped with grated Parmesan cheese and a sprinkle of fresh parsley. Enjoy!
