Ingredients

  • 14 oz Firm tofu
  • 1 cup Breadcrumbs
  • 2 tablespoons Nutritional yeast
  • 1 tablespoon Ground flaxseed
  • 3 tablespoons Water
  • 3 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 cups Marinara sauce (for serving)

Directions

Step 1

Press the tofu for 15 minutes to remove excess moisture. Use a tofu press or wrap it in a clean kitchen towel and place a heavy object on top.

Step 2

In a small bowl, combine the ground flaxseed and water. Stir and let sit for 5-10 minutes to form a flax egg.

Step 3

Crumble the pressed tofu into a medium-sized mixing bowl until it resembles fine crumbles.

Step 4

Add the breadcrumbs, nutritional yeast, minced garlic, chopped parsley, oregano, basil, salt, and pepper to the bowl with the tofu.

Step 5

Pour the prepared flax egg into the bowl and mix everything thoroughly until it comes together like a dough.

Step 6

Using your hands, form the mixture into 1.5-inch balls. You should get about 16-18 meatballs.

Step 7

Heat the olive oil in a large skillet over medium heat. Add the tofu meatballs in batches, cooking until golden brown on all sides, about 6-7 minutes total.

Step 8

Once browned, transfer the meatballs to a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for 10-12 minutes to ensure they're cooked through.

Step 9

While the meatballs are baking, heat the marinara sauce in a saucepan over low heat.

Step 10

Remove the meatballs from the oven and serve warm, either topped with marinara sauce over pasta or as a standalone appetizer with a dipping sauce.
