Ingredients

  • 2 pounds Ground turkey
  • 0.75 cups Breadcrumbs
  • 0.5 cups Parmesan cheese, grated
  • 2 large Eggs
  • 1 cups Marinara sauce
  • 1 medium Onion, finely diced
  • 3 cloves Garlic, minced
  • 0.25 cups Fresh parsley, chopped
  • 1 teaspoons Dried oregano
  • 1 teaspoons Dried basil
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 0.5 cups Mozzarella cheese, shredded (for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté for 3-4 minutes until softened and fragrant. Set aside to cool slightly.

Step 3

In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, eggs, 1/2 cup of marinara sauce, cooked onion and garlic mixture, chopped parsley, oregano, basil, salt, and black pepper.

Mix the ingredients gently but thoroughly with your hands or a large spoon until fully combined. Avoid overmixing as this can make the meatloaf dense.

Transfer the meat mixture to a greased or parchment-lined loaf pan, or shape it into a freeform loaf on a lined baking sheet.

Spread the remaining 1/2 cup of marinara sauce evenly over the top of the meatloaf.

Bake in the preheated oven for 40 minutes. Remove the meatloaf, sprinkle the shredded mozzarella cheese on top, and return it to the oven.

Bake for an additional 10 minutes, or until the cheese is melted and bubbly, and the internal temperature of the meatloaf reaches 165°F (74°C).

Step 9

Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing and serving.

Step 10

Serve warm with additional marinara sauce on the side, if desired.
