Ingredients

  • 3 medium zucchini
  • 2 tablespoons olive oil
  • 3 large garlic cloves
  • 1 cup cherry tomatoes
  • 1 teaspoon dried oregano
  • 0.5 teaspoon crushed red pepper flakes
  • 0.25 cup Parmesan cheese
  • 2 tablespoons fresh basil leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash the zucchini and slice them into 1/4-inch thick rounds.

Step 2

Peel and finely mince the garlic cloves.

Step 3

Heat a large skillet over medium heat and add the olive oil.

Step 4

Once the oil is hot, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 5

Add the zucchini slices to the skillet and season with salt and black pepper. Cook for 5-7 minutes, stirring occasionally, until the zucchini begin to soften and slightly brown.

Step 6

Stir in the cherry tomatoes, dried oregano, and crushed red pepper flakes. Cook for another 5 minutes, allowing the tomatoes to soften and release their juices.

Step 7

Remove the skillet from heat and sprinkle the grated Parmesan cheese evenly over the zucchini mixture.

Step 8

Garnish with freshly chopped basil leaves and serve warm as a side dish.
