  • 4 pieces Chicken breasts
  • 2 cups Fresh spinach
  • 0.33 cup Sun-dried tomatoes (chopped)
  • 1 cup Shredded mozzarella cheese
  • 0.25 cup Grated Parmesan cheese
  • 2 cloves Garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 8 pieces Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a baking dish with a light coating of olive oil.

Carefully butterfly the chicken breasts by slicing horizontally through the middle without cutting all the way through to create a pocket.

Season the inside and outside of the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
