Ingredients

  • 2 pounds fresh spinach
  • 2 tablespoons olive oil
  • 3 units garlic cloves, minced
  • 1 large onion, finely chopped
  • 1 14-ounce can crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup Parmesan cheese, grated
  • 0.25 teaspoon crushed red pepper flakes (optional)

Directions

Step 1

Wash the fresh spinach thoroughly under cold running water to remove any dirt. Dry it with a clean towel or salad spinner.

Step 2

In a large skillet or sauté pan, heat the olive oil over medium heat.

Step 3

Add the minced garlic and onion to the skillet. Sauté for 2-3 minutes, stirring occasionally, until fragrant and the onion is translucent.

Step 4

Add the crushed tomatoes, Italian seasoning, salt, black pepper, and red pepper flakes (if using) to the skillet. Stir well to combine and let it simmer for 5 minutes.

Step 5

Add the fresh spinach to the skillet in batches, stirring gently after each addition until wilted. This may take 3-4 minutes.

Step 6

Once all the spinach is wilted and incorporated, stir in the grated Parmesan cheese.

Step 7

Taste and adjust seasoning, adding more salt or pepper if necessary.

Step 8

Remove the skillet from heat and let the Italian spinach cool completely.

Step 9

Divide the spinach mixture into freezer-safe containers or zip-top bags, portioning for individual servings or family-sized meals.

Step 10

For freezing, label each container with the name and date. Store in the freezer for up to 3 months.

Step 11

To reheat, thaw in the refrigerator overnight and warm in a skillet over low heat or microwave until heated through.
