Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 28 ounces canned crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 2 leaves bay leaves
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a spatula. Remove and set aside.

Step 3

In the same pot, add the onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.

Step 4

Return the ground beef to the pot and stir in the canned crushed tomatoes, beef broth, Italian seasoning, bay leaves, salt, and black pepper. Bring to a simmer and reduce the heat to low.

Step 5

In a mixing bowl, prepare the spinach dumplings by combining the chopped spinach, ricotta cheese, Parmesan cheese, eggs, all-purpose flour, 0.5 teaspoons of salt, and fresh parsley. Mix until a thick batter forms.

Step 6

Using a small spoon or cookie scoop, shape the dumpling mixture into small balls (about 1–1.5 inches in diameter).

Step 7

Carefully drop the dumplings into the simmering stew. Cover the pot and cook for 15–20 minutes, or until the dumplings are cooked through and tender.

Step 8

Taste the stew and adjust the seasoning with more salt or pepper if needed.

Step 9

Serve hot, garnished with extra Parmesan cheese and fresh parsley if desired.
