Ingredients

  • 2 tablespoons Olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 large Red bell pepper, diced
  • 1 medium Zucchini, sliced into half moons
  • 1 14-ounce can Canned diced tomatoes
  • 1 8-ounce can Tomato sauce
  • 1 cup Chicken broth
  • 8 ounces Uncooked short pasta (penne, rotini, or shells)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 0.25 cup Fresh basil leaves, chopped
  • 0.5 cup Grated Parmesan cheese (for serving)

Directions

Step 1

Heat a large skillet over medium-high heat. Add olive oil and allow it to heat for 1 minute.

Step 2

Add the Italian sausage to the skillet. Use a wooden spoon to break it up into crumbles and cook until browned and fully cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside on a plate lined with paper towels.

Step 3

In the same skillet, add the diced onion and cook for 2-3 minutes until softened.

Step 4

Stir in the minced garlic, red bell pepper, and zucchini. Cook for another 4-5 minutes, stirring occasionally, until the vegetables are tender.

Step 5

Add the canned diced tomatoes (with their juices), tomato sauce, and chicken broth to the skillet. Stir to combine.

Step 6

Stir in the pasta, Italian seasoning, salt, black pepper, and crushed red pepper flakes (if using). Bring the mixture to a boil, then reduce the heat to a simmer.

Step 7

Cover the skillet and let the mixture cook for 15-18 minutes, stirring occasionally, or until the pasta is tender and has absorbed most of the liquid.

Step 8

Return the cooked sausage to the skillet and stir to combine. Let it heat through for 2 minutes.

Step 9

Taste and adjust seasoning if needed. Stir in the fresh basil just before serving.

Step 10

Serve hot, topped with grated Parmesan cheese. Pair with a side salad or crusty bread for a complete meal.
