  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 medium carrot, finely diced
  • 1 medium celery stalk, finely diced
  • 2 cloves garlic cloves, minced
  • 2 tablespoons tomato paste
  • 400 grams canned diced tomatoes
  • 125 milliliters beef or chicken broth
  • 125 grams frozen peas
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil, then cook for 15–20 minutes or until the potatoes are fork-tender.

While the potatoes cook, heat olive oil in a large skillet over medium heat. Add the chopped onion, carrot, and celery, and sauté for 5 minutes until softened.
