Ingredients

  • 3 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 4 pieces garlic cloves, minced
  • 2 pieces celery stalks, diced
  • 1 medium carrot, diced
  • 28 ounces crushed tomatoes
  • 4 cups fish stock or seafood stock
  • 1 cup dry white wine
  • 1 piece bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoons red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 pound fresh mussels, cleaned and scrubbed
  • 1 pound raw shrimp, peeled and deveined
  • 0.5 pounds calamari rings
  • 1 pound firm white fish fillet (such as cod), cut into 2-inch pieces
  • 2 tablespoons fresh parsley, chopped
  • 4 slices crusty bread, for serving

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the chopped onion, garlic, celery, and carrot. Sauté for about 5 minutes until the vegetables are softened and fragrant.

Step 3

Stir in the crushed tomatoes, fish or seafood stock, and white wine. Mix well.

Step 4

Add the bay leaf, dried oregano, dried thyme, red pepper flakes, salt, and black pepper to the pot. Stir to combine, then bring the mixture to a simmer.

Step 5

Cover the pot partially with a lid and let the soup simmer for 15-20 minutes, allowing the flavors to meld together.

Step 6

Add the mussels to the pot and cook for 3-4 minutes, until they begin to open.

Step 7

Add the shrimp, calamari, and white fish pieces. Simmer gently for an additional 4-5 minutes, until the seafood is cooked through and opaque.

Step 8

Discard any mussels that do not open during cooking.

Step 9

Taste the soup and adjust seasoning with additional salt or pepper, if needed.

Step 10

Ladle the soup into bowls and sprinkle with chopped fresh parsley.

Step 11

Serve hot with slices of crusty bread on the side for dipping.
