Ingredients

  • 6 links Italian sausage (mild or hot)
  • 2 tablespoons Olive oil
  • 3 medium Bell peppers (assorted colors, sliced)
  • 2 medium Onions (thinly sliced)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 1 teaspoon Dried oregano
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 12 ounces Beer (lager or pale ale)
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet or sauté pan over medium heat.

Step 2

Add the Italian sausage links to the pan and cook until browned on all sides, about 8-10 minutes. Remove the sausages and set them aside on a plate.

Step 3

In the same pan, add the remaining tablespoon of olive oil. Stir in the sliced bell peppers, onions, and a pinch of salt.

Step 4

Cook the peppers and onions over medium heat, stirring occasionally, until they soften and begin to caramelize, about 10 minutes.

Step 5

Add the minced garlic, oregano, and crushed red pepper flakes (if using) to the pan. Cook for 1-2 minutes, stirring frequently, until the garlic becomes fragrant.

Step 6

Return the sausages to the pan, nestling them into the peppers and onions.

Step 7

Pour the beer over the sausages and vegetable mixture, ensuring the liquid covers the bottom of the pan.

Step 8

Bring the mixture to a simmer, reduce the heat to low, and cover the pan. Let it cook for 10-12 minutes, or until the sausages are fully cooked through (internal temperature of 160°F/71°C).

Step 9

Uncover the pan and let it simmer for an additional 2-3 minutes to allow the sauce to slightly thicken.

Step 10

Taste and adjust seasoning with additional salt and freshly ground black pepper, if necessary.

Step 11

Garnish with freshly chopped parsley before serving.

Step 12

Serve hot with crusty bread or atop a pile of mashed potatoes or rice for a complete meal.
