Ingredients

  • 12 oz bow tie pasta (farfalle)
  • 1 lb Italian sausage (mild or hot, your choice)
  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 28 oz crushed tomatoes (canned)
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.25 tsp red pepper flakes (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup Parmesan cheese, grated (for serving)
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the bow tie pasta according to the package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Remove the casings from the Italian sausage, if applicable. Add the sausage to the skillet and cook, breaking it into small crumbles with a spatula, for 7-8 minutes or until browned and cooked through. Remove the sausage from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion and cook for 4-5 minutes, stirring occasionally, until softened.

Step 5

Stir in the minced garlic and cook for 30 seconds until fragrant.

Add the crushed tomatoes, tomato paste, dried basil, dried oregano, red pepper flakes (if using), salt, and black pepper. Stir well to combine.

Return the cooked sausage to the skillet. Simmer the sauce over low heat for 10-12 minutes, stirring occasionally, to allow the flavors to blend.

Add the drained pasta to the skillet and toss well to coat the pasta in the sauce.

Serve the pasta warm, topped with grated Parmesan cheese and garnished with fresh parsley.
