  • 6 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 4 cups fresh spinach, roughly chopped
  • 0.5 cup parmesan cheese, grated (optional)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage from the pot with a slotted spoon and set aside, leaving the rendered fat in the pot.

Step 2

Add the olive oil to the pot, followed by the diced onion. Sauté the onion for 2-3 minutes until it becomes translucent, then add the minced garlic. Cook for another 30 seconds until fragrant.
