Ingredients

  • 4 large Portabella mushroom caps
  • 3 tablespoons Olive oil
  • 1 pound Italian sausage (mild or hot, casing removed)
  • 3 whole Garlic cloves, minced
  • 1 medium Onion, finely diced
  • 0.5 cup Breadcrumbs (preferably panko)
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh basil, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Mozzarella cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Clean the portabella mushroom caps by wiping them with a damp paper towel. Remove the stems and scrape out the gills with a spoon to create space for the stuffing.

Step 3

Brush the mushroom caps with 2 tablespoons of olive oil on both sides. Place them gill-side up on the prepared baking sheet.

Step 4

In a skillet over medium heat, add the remaining 1 tablespoon of olive oil. Cook the Italian sausage, breaking it into small pieces with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage and set aside.

In the same skillet, add the minced garlic and diced onion. Sauté for 2-3 minutes, until softened and fragrant.
