  • 15 ounces cannellini beans, drained and rinsed
  • 1 medium zucchini, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.25 teaspoon crushed red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 cups baby spinach
  • 0.25 cup parmesan cheese, grated (for garnish)

Directions

Step 1

Heat a large soup pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it into crumbles, until browned and cooked through. Remove the sausage with a slotted spoon and set aside.
