Preheat your oven to 425°F (220°C).
Place the red and yellow bell peppers on a baking sheet and roast in the oven for 20-25 minutes until the skins are charred and blistered.
Remove the peppers from the oven and transfer them to a bowl. Cover the bowl with plastic wrap and let the peppers steam for 10 minutes to loosen the skins.
While the peppers are steaming, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage links and cook for 8-10 minutes, turning occasionally, until browned. Remove from the skillet and set aside.

Slice the sandwich rolls in half and lightly toast them under the broiler for 1-2 minutes.
Assemble the sandwiches by layering the sausage and pepper mixture onto the bottom half of each roll. Top with a slice of provolone cheese and place under the broiler for an additional 1-2 minutes until the cheese is melted.
Place the top half of the roll on each sandwich and serve warm.
