Heat the olive oil in a large skillet or Dutch oven over medium heat.
Remove the casings from the Italian sausage (if applicable). Add the sausage to the skillet and cook, breaking it into smaller pieces with a wooden spoon, until browned and cooked through, about 6-8 minutes. Remove any excess grease, if necessary.
