Ingredients

  • 1 pound Italian sausage
  • 1 medium, diced Yellow onion
  • 3 minced Garlic cloves
  • 4 medium, peeled and diced Russet potatoes
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 2 cups, fresh Spinach
  • 1 tablespoon Olive oil
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes
  • 0.5 cup, grated (optional) Parmesan cheese

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the Italian sausage to the pot, breaking it up into small pieces with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes. Remove the sausage from the pot and set aside on a plate, leaving the rendered fat in the pot.

Step 3

Add the diced onion to the pot and sauté for 3-4 minutes, until softened.

Step 4

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 5

Add the diced potatoes to the pot and pour in the chicken broth.

Step 6

Bring the mixture to a boil, then reduce the heat to medium-low. Cover and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

Step 7

Return the cooked sausage to the pot and stir to combine.

Step 8

Reduce the heat to low and pour in the heavy cream, stirring until the soup is creamy and well mixed.

Step 9

If desired, stir in the spinach and cook for 2-3 minutes, until wilted.

Step 10

Season the soup with salt, black pepper, and crushed red pepper flakes to taste.

Step 11

Ladle the soup into bowls and garnish with grated Parmesan cheese, if desired. Serve hot.
