Ingredients

  • 4 links Italian sausage
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 3 cloves garlic cloves
  • 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 ounces penne pasta
  • 0.5 cup parmesan cheese
  • 2 tablespoons fresh parsley

Directions

Step 1

Remove the casings from the Italian sausage links, if necessary.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it into small pieces, until browned and cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion and sauté for 2-3 minutes until softened.

Add the minced garlic and cook for 1 minute until fragrant.

Stir in the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and black pepper. Bring the sauce to a gentle simmer and let it cook for 10 minutes, stirring occasionally.
