  • 2 Celery stalks, chopped
  • 3 Garlic cloves, minced
  • 1 28-oz can Crushed tomatoes
  • 4 cups Chicken or vegetable broth
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Small pasta noodles (like ditalini or elbow)
  • 2 tbsp Fresh parsley, chopped
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the olive oil and Italian sausage. Cook for about 5-7 minutes, breaking the sausage into crumbles, until browned and cooked through. Remove the sausage with a slotted spoon and set aside, leaving any rendered fat in the pot.

Step 2

To the same pot, add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables begin to soften.

Step 3

Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant.

Step 4

Stir in the crushed tomatoes, chicken or vegetable broth, dried oregano, dried basil, salt, and black pepper. Bring the mixture to a boil.
