  • 1.5 cups brown lentils, rinsed
  • 8 cups low-sodium chicken broth
  • 1 leaf bay leaf
  • 4 cups fresh spinach (or kale), roughly chopped
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 cup Parmesan cheese, grated (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.
