Ingredients

  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 12 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 2 medium zucchini (sliced into half-moons)
  • 1 large red bell pepper (sliced)
  • 28 ounces crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoons red pepper flakes (optional)
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cups grated Parmesan cheese
  • 2 tablespoons fresh basil (chopped, for garnish)
  • 0 to taste salt
  • 0 to taste ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the penne pasta in a large pot of salted boiling water until al dente, according to package instructions. Drain and set aside.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove the sausage from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the diced onion until soft and translucent (about 3-4 minutes). Add the minced garlic and cook for 1 additional minute until fragrant.

Step 5

Add the zucchini and red bell pepper to the skillet. Sauté for 5-6 minutes until the vegetables are slightly tender. Season with a pinch of salt and pepper.

Step 6

Stir in the crushed tomatoes, Italian seasoning, and red pepper flakes (if using). Bring the mixture to a simmer and let it cook for 5 minutes, stirring occasionally.

Step 7

Return the cooked sausage to the skillet and mix well. Adjust seasoning with more salt and pepper as needed.

Step 8

In a large mixing bowl, combine the cooked pasta and the sausage-vegetable-tomato mixture. Stir until everything is well coated.

Step 9

Transfer the mixture to a 9x13-inch baking dish, spreading it out evenly. Sprinkle the mozzarella cheese and Parmesan cheese evenly over the top.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Step 11

Remove from the oven and let it cool for 5 minutes. Sprinkle the chopped fresh basil over the top before serving.
