Ingredients

  • 4 links Italian sausage (mild or spicy, casings removed)

  • 1 medium red bell pepper, sliced
  • 2 small zucchini, sliced into half-moons
  • 3 cups baby spinach
  • 3 cloves minced garlic
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon crushed red pepper flakes (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat a large skillet over medium heat. Add the olive oil and Italian sausage, breaking it apart with a wooden spoon. Cook for 5-7 minutes, or until the sausage is browned and cooked through. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.

Step 2

In the same skillet, add the diced onion and red bell pepper. Sauté for 3-4 minutes, or until slightly softened.
