  • 1 pound Italian sausage (mild or spicy, to taste)

  • 3 tablespoons Olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Chicken broth
  • 1 cup Shredded mozzarella cheese
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Add the Italian sausage to the skillet and cook, breaking it into small pieces with a spoon, until fully browned. Remove from the skillet and set aside.

In the same skillet, add the remaining olive oil. Stir in the diced potatoes and cook for about 5-7 minutes until they start to brown.
