Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 medium celery stalks, diced
  • 4 cloves garlic cloves, minced
  • 1 28-ounce can crushed tomatoes
  • 6 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup penne pasta (uncooked)
  • 2 cups fresh spinach leaves
  • 0.5 cup Parmesan cheese, grated (optional, for garnish)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.

Step 2

Add the Italian sausage and cook until browned, breaking it into small pieces with a wooden spoon. Remove the cooked sausage with a slotted spoon and set aside.

Step 3

In the same pot, add the diced onion, carrots, and celery. Sauté for 5-6 minutes, or until the vegetables are softened.

Step 4

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 5

Pour in the crushed tomatoes and chicken broth. Add the dried basil, dried oregano, salt, and black pepper. Stir well to combine.

Step 6

Return the cooked sausage to the pot and bring the soup to a boil over high heat.

Step 7

Once boiling, reduce the heat to low, cover, and simmer for 15 minutes to allow the flavors to develop.

Step 8

Add the uncooked penne pasta to the soup and simmer for an additional 10 minutes, or until the pasta is tender.

Step 9

Stir in the fresh spinach leaves and cook for 1-2 minutes, just until wilted.

Step 10

Taste and adjust seasoning with additional salt and pepper if needed.

Step 11

Ladle the soup into bowls and garnish with grated Parmesan cheese and chopped fresh parsley, if desired.

Step 12

Serve hot and enjoy!
