Ingredients

  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 medium onion
  • 6 large eggs
  • 3 tablespoons milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons crushed red pepper flakes
  • 2 cloves garlic
  • 4 pieces Italian bread or rolls

Directions

Step 1

Wash and thinly slice the red and green bell peppers, and thinly slice the onion.

Step 2

Peel and mince the garlic cloves.

Step 3

In a large sauté pan, heat the olive oil over medium heat.

Add the sliced peppers, onion, and minced garlic to the pan. Sauté for 8-10 minutes, stirring occasionally, until the vegetables are soft and slightly caramelized.

Meanwhile, in a medium bowl, whisk together the eggs, milk, salt, black pepper, and crushed red pepper flakes until well combined.
