Ingredients

  • 4 pounds whole chicken
  • 4 tablespoons olive oil
  • 6 pieces garlic cloves, minced
  • 1 piece lemon, juiced and zested
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon paprika
  • 1 piece yellow onion, cut into quarters
  • 4 pieces carrots, peeled and cut into large chunks
  • 3 pieces potatoes, cut into 1-inch cubes
  • 1 cup dry white wine or chicken broth

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

Remove any giblets from the chicken cavity and pat the chicken dry with paper towels.

Step 3

In a small bowl, combine olive oil, minced garlic, lemon juice, lemon zest, rosemary, thyme, salt, black pepper, and paprika to create the marinade.

Rub the marinade all over the chicken, making sure to get under the skin and inside the cavity for maximum flavor.

Stuff the cavity of the chicken with the quartered onion and half of the lemon. Tie the legs together with kitchen twine if desired for even cooking.
