Ingredients

  • 500 g fresh cherries (pitted)
  • 200 g all-purpose flour
  • 150 g granulated sugar
  • 100 g unsalted butter (softened)
  • 3 eggs
  • 120 ml whole milk
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 2 tbsp powdered sugar (optional, for decoration)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9-inch (23 cm) round cake pan. Optionally, line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

Using an electric mixer, cream the softened butter and sugar together in a large bowl until light and fluffy (about 2-3 minutes).

Step 4

Add the eggs one at a time to the butter-sugar mixture, beating well after each addition. Mix in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet mixture in three additions, alternating with the milk. Begin and end with the dry ingredients. Mix just until combined; do not overmix.

Step 6

Gently fold in about two-thirds of the pitted cherries into the batter, ensuring they are evenly distributed.

Step 7

Pour the batter into the prepared cake pan and smooth the top with a spatula. Arrange the remaining cherries on top for a decorative finish.

Step 8

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Step 10

Once cooled, dust the top with powdered sugar if desired. Slice and serve!
