Ingredients

  • 1 cup Giardiniera (Italian pickled vegetable mix)
  • 4 cups Romaine lettuce
  • 2 cups Arugula
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.25 medium Red onion
  • 0.5 cup Kalamata olives
  • 0.5 cup Parmesan cheese (shaved)
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Lemon juice
  • 1 clove Garlic (minced)
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

1. Chop the giardiniera into bite-sized pieces, if necessary. Set aside.

2. Wash and dry the romaine lettuce and arugula. Tear the romaine leaves into smaller pieces and add both greens to a large salad bowl.

3. Slice the cherry tomatoes in half, thinly slice the cucumber, and finely slice the red onion. Add these to the bowl along with the Kalamata olives.
