  • 0.5 cup Italian breadcrumbs

  • 1 tsp salt

  • 1 unit yellow onion, diced
  • 3 unit garlic cloves, minced
  • 3 unit carrots, peeled and sliced
  • 2 unit celery stalks, sliced
  • 1.5 lb baby potatoes, halved
  • 28 oz canned diced tomatoes
  • 4 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 unit bay leaf
  • 2 cups baby spinach

Directions

Step 1

In a large mixing bowl, combine the ground beef, Italian breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix until well combined.

Shape the mixture into 1-inch meatballs and set aside.

Heat olive oil in a large skillet over medium heat. Add the meatballs in batches and sear them until browned on all sides. They do not need to be cooked through. Transfer the browned meatballs to the crock pot.
