Ingredients

  • 1 cup Breadcrumbs

  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 2 cups Marinara sauce
  • 4 large Italian baguettes or sub rolls
  • 1 cup Shredded mozzarella cheese (or dairy-free alternative)

Directions

Step 1

Rinse the lentils and add them to a medium saucepan. Cover with water and bring to a boil. Reduce the heat and simmer for 20-25 minutes until tender. Drain and let cool slightly.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large bowl, combine the cooked lentils, breadcrumbs, Parmesan cheese (or nutritional yeast), egg (or flax egg), onion, garlic, parsley, oregano, salt, and black pepper. Mash the mixture with a fork or potato masher until it holds together (some texture is fine).
