Ingredients

  • 8 large eggs
  • 0.25 cups whole milk
  • 2 tablespoons olive oil
  • 2 cloves (minced) garlic
  • 1 medium (diced) yellow onion
  • 1 small (diced) red bell pepper
  • 1 small (thinly sliced into half moons) zucchini
  • 0.5 pounds (fully cooked and crumbled) Italian sausage
  • 0.5 cups grated Parmesan cheese
  • 0.25 cups (chopped) fresh basil leaves
  • 1 cup (loosely packed) fresh spinach
  • 0.75 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons (optional) crushed red pepper flakes

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large bowl, whisk together the eggs, whole milk, grated Parmesan cheese, salt, and black pepper. Set aside.

Step 3

Heat a 10- or 12-inch ovenproof skillet over medium heat and add the olive oil.

Step 4

Add the diced onion and sauté for 2-3 minutes until softened. Then stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 5

Add the diced red bell pepper and sliced zucchini to the skillet. Cook for 3-4 minutes, stirring occasionally, until the vegetables are slightly tender.

Step 6

Stir in the crumbled, fully cooked Italian sausage and the fresh spinach. Cook just until the spinach wilts down, about 1-2 minutes.

Step 7

Pour the egg mixture evenly over the vegetables and sausage in the skillet. Use a spatula to gently stir and spread the mixture so all ingredients are evenly distributed.

Step 8

Cook on the stovetop over medium heat for about 3 minutes, or until the edges of the frittata start to set.

Step 9

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is fully set and slightly golden on top.

Step 10

Remove the skillet from the oven and let the frittata cool for 5 minutes. Sprinkle with chopped fresh basil and a pinch of red pepper flakes if desired.

Step 11

Slice into wedges and serve warm. Enjoy your delicious Italian Holiday Frittata!
