Ingredients

  • 12 oz penne pasta
  • 2 pieces chicken breasts
  • 2 tbsp olive oil
  • 3 pieces garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp dried thyme
  • 0.25 tsp crushed red pepper flakes (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 15 oz can of crushed tomatoes
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, slice the chicken breasts into bite-sized strips.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken strips and season with 0.5 tsp of salt and 0.25 tsp of black pepper. Cook for 5-7 minutes or until the chicken is cooked through and slightly golden. Transfer the chicken to a plate and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil and reduce the heat to medium. Add the minced garlic and sauté for 1-2 minutes until fragrant.
