  • 400 grams canned diced tomatoes (with juice)
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese (grated)
  • 2 tablespoons fresh basil leaves (chopped)
  • 300 grams penne pasta (or other short pasta)
  • 0 (as needed) water for boiling pasta

Directions

Step 1

Heat the olive oil and butter in a large skillet over medium-high heat.

Season both sides of the chicken breasts with salt and black pepper. Cook the chicken in the skillet for 5-6 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside to rest.

Reduce the heat to medium, then add the diced pancetta to the skillet. Cook until golden and crispy, about 3-4 minutes.
