Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 0.5 teaspoons crushed red pepper flakes
  • 1 cups dry white wine
  • 28 ounces canned diced tomatoes
  • 3 cups fish stock or clam juice
  • 1 leaf bay leaf
  • 2 sprigs fresh thyme sprigs
  • 1 pound fresh mussels, cleaned and debearded
  • 1 pound fresh clams, scrubbed
  • 1 pound uncooked large shrimp, peeled and deveined
  • 1 pound firm white fish (e.g., cod or halibut), cut into 2-inch pieces
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped
  • 4 wedges lemon wedges, for serving

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot over medium heat.

Step 2

Add the diced onion and sauté for 5-7 minutes until softened and translucent.

Step 3

Stir in the minced garlic and crushed red pepper flakes, cooking for 1-2 minutes until fragrant.

Step 4

Pour in the dry white wine and let it simmer for 2-3 minutes to reduce slightly.

Step 5

Add the canned diced tomatoes (along with their juice), fish stock or clam juice, bay leaf, and thyme sprigs. Stir to combine and bring to a gentle simmer.

Step 6

Season the broth with salt and black pepper, adjusting to taste.

Step 7

Add the mussels and clams to the pot, cover, and cook for 6-8 minutes until they begin to open. Discard any that do not open.

Step 8

Add the shrimp and white fish pieces to the pot, gently stirring to ensure they are submerged in the broth. Cover and cook for another 4-5 minutes until the seafood is opaque and just cooked through.

Step 9

Remove the bay leaf and thyme sprigs. Taste the stew and adjust the seasoning if needed.

Step 10

Ladle the stew into bowls, garnish with fresh parsley, and serve with lemon wedges on the side.
