Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 8 ounces Baby bella mushrooms (sliced)
  • 14.5 ounces Diced tomatoes (with juice)
  • 2 tablespoons Tomato paste
  • 1 cup Chicken broth
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion (finely chopped)
  • 3 cloves Garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped for garnish)

Directions

Step 1

Heat the olive oil in a small skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and sauté for another 1-2 minutes until fragrant. Remove from heat.
