  • 1 large red bell pepper, diced
  • 1 15-ounce can diced tomatoes, canned
  • 6 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups baby spinach
  • 0.25 cup parmesan cheese, grated (optional)
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper, then add them to the hot oil. Cook for about 5 minutes per side, or until golden brown and cooked through. Remove the chicken from the pot and set aside to cool.
