  • 2 14.5-ounce cans Canned fire-roasted diced tomatoes
  • 3 cups Chicken or vegetable broth
  • 2 tbsp Tomato paste
  • 1 tsp Fresh rosemary, chopped
  • 1 tsp Fresh thyme, chopped
  • 1 Bay leaf
  • 0.5 tsp Red pepper flakes (optional, for spice)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)
  • 0.5 cup Grated Parmesan cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.

Add the Italian sausage to the pot and break it apart with a wooden spoon. Cook for 6-8 minutes, or until browned and fully cooked. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the pot.
