Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 2 medium Zucchini, diced
  • 1.5 cups Arborio rice
  • 0.5 cups Dry white wine
  • 4 cups Vegetable broth
  • 1 cup Black beans, drained and rinsed
  • 0.5 cups Grated Parmesan cheese
  • 2 tablespoons Fresh basil, chopped
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 teaspoon Lemon zest
  • 0.25 teaspoons Crushed red pepper flakes (optional)

Directions

Step 1

Heat the vegetable broth in a small pot over low heat and keep it warm throughout the cooking process.

Step 2

In a large skillet or saucepan, heat olive oil over medium heat.

Step 3

Add the finely chopped onion and cook for about 3-4 minutes until softened and translucent.

Step 4

Stir in the minced garlic and zucchini, and cook for another 3-4 minutes until the zucchini starts to soften.
