Ingredients

  • 3 pounds Beef chuck roast
  • 4 cups Beef broth
  • 4 cloves Garlic cloves, minced
  • 2 teaspoons Dried oregano
  • 2 teaspoons Dried basil
  • 0.5 teaspoons Crushed red pepper flakes
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 1 packet Italian dressing mix
  • 1.5 cups Giardiniera (hot or mild, as preferred)
  • 6 pieces Italian rolls or French bread
  • 6 slices Provolone cheese slices
  • 2 tablespoons Vegetable oil
  • 1 medium Onion, sliced (optional)

Directions

Step 1

1. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Sear the beef chuck roast on all sides until browned, about 2-3 minutes per side.

2. Transfer the seared roast to a slow cooker.

3. In a medium bowl, combine beef broth, minced garlic, dried oregano, dried basil, crushed red pepper flakes, ground black pepper, salt, and the Italian dressing mix. Stir well and pour the mixture over the roast in the slow cooker.

4. Add the sliced onion (if using) and half of the giardiniera to the slow cooker. Cover and cook on low for 8 hours or on high for 5 hours, until the beef is tender and easily shreds with a fork.
