Ingredients

  • 500 g Ground beef (80% lean)
  • 100 g Breadcrumbs
  • 50 g Parmesan cheese, grated
  • 1 large Egg, lightly beaten
  • 2 cloves Garlic, minced
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 4 medium Tomatoes, diced
  • 0.5 medium Red onion, finely chopped
  • 2 tbsp Fresh basil leaves, chopped
  • 1 tbsp Lemon juice
  • 1 tbsp Extra virgin olive oil
  • 0.25 tsp Salt (for salsa)
  • 0.25 tsp Black pepper (for salsa)

Directions

Step 1

In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, beaten egg, minced garlic, chopped parsley, dried oregano, 1 tsp salt, and 0.5 tsp black pepper. Mix well with clean hands until all ingredients are evenly distributed.

Step 2

Divide the mixture into 8 equal portions and shape each portion into a flattened rissole about 2 cm thick.

Heat 2 tbsp of olive oil in a large non-stick skillet over medium heat. Cook the rissoles in batches for 3-4 minutes on each side or until they are golden brown and fully cooked through. Remove and set aside on a plate lined with paper towels.

While the rissoles are cooking, prepare the fresh tomato salsa. Combine diced tomatoes, finely chopped red onion, chopped basil leaves, lemon juice, 1 tbsp extra virgin olive oil, 0.25 tsp salt, and 0.25 tsp black pepper in a medium bowl. Toss gently to combine.
