  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 12 oz Italian sausage (mild or spicy)
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 14.5 oz canned diced tomatoes
  • 15 oz canned white beans (like cannellini or great northern), drained and rinsed
  • 1 tsp dried oregano
  • 0.25 tsp red pepper flakes (optional)
  • 2 cups fresh spinach
  • 0.5 cup Parmesan cheese, grated
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

Step 2

Heat the olive oil in a large skillet over medium-high heat.

Step 3

Remove the casings from the Italian sausage, if using links, and crumble the sausage into the skillet. Cook, breaking it into small pieces, for about 5-7 minutes or until browned and cooked through.

Add the diced onion to the skillet and sauté for 3-4 minutes until softened.

Stir in the minced garlic and cook for another 30 seconds until fragrant.
