  • 1 cup pastina (small pasta, such as acini di pepe or ditalini)

  • 1 pound boneless, skinless chicken breasts (cubed)
  • 1 medium onion (finely diced)
  • 2 cloves garlic (minced)
  • 14 ounces canned diced tomatoes (with juices)
  • 1 cup low-sodium chicken broth
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup Parmesan cheese (grated)
  • 1 cup mozzarella cheese (shredded)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Bring a large pot of salted water to a boil. Cook the pastina (or small pasta) for 2 minutes less than the package instructions indicate. Drain and set aside.

In a large sauté pan, heat the olive oil over medium heat. Add the cubed chicken and cook for 5-7 minutes, or until browned and fully cooked. Remove the chicken from the pan and set aside.
