Ingredients

  • 3 pieces Ripe bananas
  • 120 grams All-purpose flour
  • 50 grams Granulated sugar
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 60 milliliters Milk
  • 1 piece Egg
  • 1 teaspoon Vanilla extract
  • 500 milliliters Vegetable oil (for frying)
  • 20 grams Powdered sugar (optional, for topping)

Directions

Step 1

Peel and mash the bananas in a large mixing bowl until smooth with a few small chunks remaining.

Step 2

In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Add the flour mixture to the mashed bananas and mix gently until combined.

Step 4

In another small bowl, whisk together the milk, egg, and vanilla extract, then pour this wet mixture into the banana-flour mixture. Stir until a thick batter forms.

Step 5

Heat the vegetable oil in a deep frying pan or pot over medium heat until it reaches 175°C (350°F). To test if the oil is ready, drop a small piece of batter into the oil—it should sizzle immediately and float to the surface.

Step 6

Using a tablespoon or small scoop, carefully drop spoonfuls of batter into the hot oil. Fry in batches, being careful not to overcrowd the pan.

Step 7

Cook each fritter for 2-3 minutes per side or until golden brown and crispy. Use a slotted spoon to remove them from the oil.

Step 8

Place the cooked fritters on a plate lined with paper towels to drain any excess oil.

Step 9

Repeat until all the batter is used up. Allow the fritters to cool slightly before serving.

Step 10

Sprinkle powdered sugar on top for extra sweetness (optional) and serve warm.
